Mexican Madness Wrap!

This was the MOST popular item on the menu at my restaurant. It was literally ordered more than triple the amount of any other item. Seriously.

It is so delicious, and filled with whole foods for your clean eating and plant based meals!


Ingredients: Per ONE wrap

1/4 cup white bean dip - find recipe here : white-bean-dip

1/4 cup walnut taco meat - find recipe here: walnut-taco-meat

1/4 cup chopped cucumbers

1/4 cup chopped red peppers

2 TBSP finely chopped red onion

2 TBSP cashew cheese - find recipe here: cashew-cheese

1/4 avocado chopped

handful of spinach


  1. Lay out your favourite tortilla

  2. Spread the white bean dip across

  3. Sprinkle the walnut taco meat

  4. Add in cucumbers, red peppers, avocado and red onion

  5. Drizzle the cashew cheese on top

  6. Place the handful of spinach on top

  7. Fold in the sides of the tortilla and then roll it up

  8. Warm up your grill or a pan and toast it up

  9. ENJOY!
